Adding Weight Incrementally to your Plate Pinch
It is a significantly large jump between plate weight when you train the plate pinch grip. Here are some of the ways I add weight to my plate pinch incrementally.

This video demonstrates a great way to train the biceps, forearms while making the movement more grip intensive. Simply take two weight plates, a little caulk for the fingers, squeeze and curl away.
